- For the dough
- 350 grams Pastry flour
- 150 grams sugar
- 1 pinch salt
- 40 grams cocoa powder
- 250 grams butter
- 1 egg
For the dough: Combine flour, sugar, salt, cocoa, pieces of butter and egg in a bowl.
Knead into a smooth dough. Shape into a ball, wrap in plastic and chill for about 30 minutes.
Preheat the oven to 180°C (approximately 350°F). Line a baking pan with parchment paper.
Press half of the dough into the baking pan.
For the filling: Stir quark and mascarpone until smooth. Separate eggs. Beat yolks, vanilla sugar, sugar and cornstarch. Stir yolk mixture into quark mixture. Beat egg whites until stiff and fold into filling. Pour filling onto dough and smooth. Cover with remaining dough and bake for about 50 minutes.
Remove, let cool in the pan and sprinkle with nuts. Slice and serve.
