- For the batter
- 100 grams soft butter
- 175 grams sugar
- 2 eggs
- 1 teaspoon real Bourbon vanilla
- 1 pinch salt
- 250 grams Pastry flour
- 2 teaspoons Baking powder
- 150 grams milk
- 225 grams Cranberry
For the preparation: Grease ramekins with butter and line with paper cups or parchment paper. Preheat oven to 175°C (approximately 350°F).
For the batter: Beat butter and sugar until light and creamy. Stir in eggs, vanilla and salt.
Combine flour with baking powder then stir in alternating with milk into the butter mixture. Rinse cranberries, drain and dry, and gently fold into the batter.
Pour batter into prepared ramekins and bake for about 20-25 minutes. Remove from oven, remove from ramekins and serve.
