100 milliliters Orange juice
250 grams Margarine
250 grams sugar
5 eggs
1 pinch salt
400 grams Pastry flour
1 packet Baking powder
180 milliliters

Preparation steps

1.

Soak cranberries in orange juice. Line a loaf pan with parchment paper.

Mix margarine with sugar until fluffy. Add eggs gradually along with 1 pinch of salt. Mix flour with baking powder and add to mixture, alternating with milk, until a smooth batter forms.

Drain cranberries and fold into batter. Pour batter into loaf pan, spread evenly and bake in a preheated oven at 180°C (approximately 350°F) or convection oven at 160°C (approximately 325°F), gas mark 2-3 for about 45 minutes. Cake is done when toothpick inserted in center comes out clean.

Remove cake from oven, cool and remove from pan. Dust with powdered sugar to taste. Slice and serve.
