Couscous Salad with Grilled Herring
Ingredients
- For the salad
- 200 grams Couscous
- 1 generous pinch Saffron (can substitute 1 teaspoon turmeric)
- 2 scallions
- 1 paprika (green)
- salt
- peppers (freshly ground)
- 2 Tbsps sunflower oil
- 2 Tbsps White vinegar
- 1 tsp Lime zest
- 2 Tbsps Orange juice
- 4 Tbsps Lime juice
- sugar
- For the herring
- 6 Herring (scales, head and skin removed)
- 2 lemons
- 2 Tbsps Chervil (chopped)
- 1 tsp Sea salt
- 1 Tbsp vegetable oil
Preparation steps
Cook couscous according to package directions with saffron.
Rinse and halve the bell pepper, remove seeds and ribs, then finely chop. Rinse and dry the scallions and finely chop. Blanche the diced peppers in boiling salted water for about 1-2 minutes. Add the scallions and cook a few minutes more. Strain through a sieve, rinse and drain.
Combine the chopped peppers and scallions with oil, vinegar, lime zest, 1 tablespoon orange juice and 2 tablespoons lime juice. Toss with the couscous. Season with salt, pepper and sugar.
Rinse and pat dry the herring fillets. Mix together lemon juice, salt and oil, then stir in the chervil and lemon zest. Add fish, cover and marinate for about 10 minutes in the lemon mixture. Drain the herring and cook on a hot grill about 5-7 minutes per side. Arrange couscous salad on a platter, top with the grilled herring, and garnish with olives and lime halves. Serve immediately.
