Preparation steps

Mix the marzipan, flour, sugar, lemon zest and 1 pinch of salt. Make a well in the middle. Beat in the egg and distribute butter around the bowl in small pieces. Use your hands to knead into a smooth dough. Form into a ball, wrap in plastic and chill for 30 minutes in the refrigerator.

Preheat the oven to 180°C (approximately 350°F).

Knead the dough again. Cut in half and cut into rolls (each about 3 cm in diameter). Cut 0.7 cm thick slices and place on a lined baking sheet. Cut the ginger into small cubes. Sprinkle the dough circles with beaten egg yolks and sprinkle with ginger. Bake for 10-12 minutes. Remove from the oven and leave to cool on a wire rack. Serve.
