Cookie Stacks with Jam
Mound flour on work surface, mix with salt and sugar and make a well in the center. Cut cold butter into small pieces and add to well in flour with egg. Cut mixture together with a knife until small crumbs form, then knead into a dough. Wrap dough in plastic wrap and refrigerate about 30 minutes.
Preheat the oven to 180°C (approximately 350°F). Flatten dough on a floured work surface and roll out about 4 mm (approximately 1/4 inch) thick.
Using cookie cutters of different sizes of the same shape, cut dough into cookies. Cut the same number of cookies for each size. Cut round holes from centers of smallest shapes.
Place cookies on a baking sheet lined with parchment paper and bake in preheated oven for about 10 minutes. Remove cookies to a wire rack to cool.
Gently warm jam and spread over large- and medium-sized cookies. Stack cookies with smallest ones on top. Dust cookies with powdered sugar to serve.
