500 grams Pastry flour
150 grams sugar
2 teaspoons Baking powder
1 Vanilla bean (sliced and seeds scraped)
1 egg
1 egg yolk
250 grams cold butter (flaked)

Preparation steps

1.

For the dough: Knead all dough ingredients together. Shape dough into a ball, wrap in plastic and chill for about 30 minutes.

Thinly roll out dough on a floured surface. Use a circular cookie cutter with a crimped edge to cut out disks in 3 different sizes. Cut a hole in the smallest size. Place dough on a baking sheet lined with parchment paper and bake in an oven preheated to 200°C (approximately 400°F) for 10 minutes.

For the filling: Heat up jam and jelly. Stack cookies, largest to smallest, and attach with jam. Fill the hole in the smallest cookie with jam and let dry. Dust with powdered sugar and serve.
