Ingredients

For pears
1 lemon
½ Cinnamon stick
2 tablespoons sugar
4 fresh Pear (such as butter pears)
For the chocolate sauce
200 milliliters Whipped cream
100 grams Dark chocolate (min. 70% cocoa)
100 grams Dark chocolate (about 50% cocoa)
1 teaspoon Pear brandy (as desired)

Preparation steps

For pears, grate lemon zest and squeeze lemon juice. Bring about 375 ml (approximately 1 1/2 cups) of water to a boil with the zest, juice, cinnamon stick and sugar. Meanwhile, peel the pears carefully so that the stem remains on the fruit. Place the fruit in boiling sauce and cook gently until soft, about 10 minutes. Turn the pears possibly once during cooking. Then lift the fruits from the sauce, drain and allow to cool.

For the chocolate sauce, bring the cream to a boil. Chop the chocolate in pieces, stir in and cook everything briefly until the ingredients have blended. Season the sauce to taste with a little pear brandy. Then allow to cool slightly.

Drizzle pears with the sauce and serve dusted to taste with some cocoa.
