Colorful Tortellini Salad

- 300 grams Tortellini with cheese filling (from the refrigerated section)
- ½ Cucumber
- ½ Bell pepper (green)
- 2 carrots
- 3 ripe Tomatoes
- 4 Tbsps Natural yogurt
- 3 Tbsps parsley (finely chopped)
- olive oil (cold-pressed)
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
Preparation

Halve and core peppers, then cut crosswise into thin strips. Rinse, halve and remove seeds from tomatoes, then cut into small cubes. Peel and slice cucumber and carrots.

Cook tortellini in salted boiling water, according to package directions. Drain, let cool slightly, transfer to a large bowl. Add vegetables, 3 tablespoons olive oil and lemon juice and toss to combine. Season with salt and pepper. Drizzle pasta with yogurt and serve sprinkled with parsley.
