9 ozs red Cherry tomatoes
8 ozs yellow Cherry tomatoes
1 small Red onion
1 garlic clove
½ oz Basil (1/2 bunch)
3 Tbsps olive oil
salt
peppers
1 oz Arugula
7 ozs fresh Ricotta cheese

Preparation steps

1.

Wash and halve the tomatoes. Peel onion and garlic. Halve onion and cut into rings. Chop garlic finely.

2.

Wash basil, dab dry and chop finely.

3.

Mix tomatoes, onions, basil, garlic and olive oil. Season with salt and pepper.

4.

Wash the arugula and dab dry. Arrange tomato salad with arugula and cheese.
