Preparation steps

For the green noodles: rinse and cook the spinach in a pot of boiling water. Squeeze tightly and grind through a meat grinder.

Mix the semolina with 200 grams (approximately 3/4 cup) of flour, 1 teaspoon salt, spinach, and 2 eggs. Knead into a smooth dough, adding water if necessary. The dough should not be sticky. Cover the dough with a cloth and let it rest. Process the dough through a pasta machine or roll out thinly and cut into shapes as desired.

For the pink, red, and yellow noodles: Mix all the ingredients together and knead into smooth doughs, adding water if necessary. Process the doughs with a pasta machine or roll out thinly with a rolling pin and cut into shapes as desired.
