In a pan heat the oil and soften the onion, then pour in one litre of water. Bring to the boil. Add the beetroot and simmer for 5 minutes. Season with salt and pepper and remove from the heat.

Blend the soup with a hand blender until rich and velvety, pour into a large bowl and leave to cool in the refrigerator for an hour.

Pour into serving dishes. Garnish with crushed pistachios and some parsley or chervil and serve.
