1 Red onion (diced)
6 cooked Beets (plain, not pickled) diced
2 Tbsps Pistachio (crushed)
6 sprigs flat-leaf parsley (or fresh chervil)

Preparation steps

1.
In a pan heat the oil and soften the onion, then pour in one litre of water. Bring to the boil. Add the beetroot and simmer for 5 minutes. Season with salt and pepper and remove from the heat.
2.
Blend the soup with a hand blender until rich and velvety, pour into a large bowl and leave to cool in the refrigerator for an hour.
3.
Pour into serving dishes. Garnish with crushed pistachios and some parsley or chervil and serve.
