Ingredients

2 Oganic oranges
2 eggs
2 egg yolks
180 grams sugar
250 milliliters freshly brewed Espresso
6 tablespoons Coffee liqueur
500 grams Whipped cream
6 Ladyfinger
For garnish

Preparation steps

1.

For the parfait, peel oranges with a sharp knife, removing all of white skin. Cut into segments.

Mix egg yolks, eggs and sugar in a saucepan and stir until creamy over low heat until the sugar has dissolved. Add espresso and 4 tablespoons liqueur. Stir and cool.

Beat cream until stiff and fold into mixture.

Drizzle ladyfingers with remaining liqueur.

Line baking dish with plastic wrap. Spread half of parfait mixture into dish. Top with a layer of ladyfingers and then add remaining parfait mixture. Smooth and cover with plastic wrap. Chill for at least 5 hours.

Approximately 30 minutes from serving, remove dish from refrigerator. Take parfait out of dish, remove plastic wrap, cut into slices and serve with orange segments and chocolate shavings.
