4 sheets white gelatin
1 Vanilla bean
¼ l strong Coffee (espresso)
3 egg yolks
80 grams sugar
200 grams Whipped cream

Preparation steps

Soak the gelatin in cold water.

Cut the vanilla bean in half lengthwise, scrape out the seeds and add both to the coffee. Bring to a boil and remove from the heat. Remove the vanilla bean.

Beat the egg yolks with the sugar until foamy, mix with 6 tablespoons of coffee, then gradually add to the remaining coffee, beating constanlty. Place over low heat and continue beating until the mixture thickens (do not boil!) Remove the pot from the stove. Add the dripping wet gelatin to the hot cream and stir until dissolved. Beat the cream over a cold water bath. Beat the cream until stiff and when the cream begins to gel, fold in. Spoon the coffee cream in a piping bag fitted with a star tip, if desired, and pipe into large glasses. Refrigerate for about 3 hours to set.
