5 large egg whites
1 pinch salt
½ tsp cream of tartar
1 ⅛ cups superfine caster sugar
2 tsps Instant Coffee powder
Rose water
pink Food coloring

Preparation steps

1.
Heat the oven to its lowest setting. Line a large baking tray with non-stick baking paper.

Put the egg whites in a mixing bowl with the salt and cream of tartar and whisk until stiff peaks form.
3.
Add the caster sugar, 1 tablespoon at a time, whisking continuously, until thick and shiny. Divide into 3 bowls.
4.
Gently fold the coffee into 1 bowl, until blended.
5.
Stir the rosewater into another bowl, then swirl in the colouring to give a marbled effect.
6.
Spoon or pipe small heaps onto the baking tray. Bake for 1 1/2- 2 hours until dry to the touch. Turn off the oven and leave the meringues to cool completely in the oven.
