Preparation steps

For the ice cream boil half of cream and then remove from heat. Separate eggs. Beat egg whites until stiff and chill. Whisk egg yolks with the sugar in a bowl over a hot water bath until creamy. Pour hot cream slowly into egg yolk mixture and mix. Add coffee and cognac and mix. Stir ice cream mixture in a bowl over a cold water bath until it is completely cooled. Whip remaining cream until stiff and fold together with beaten egg whites into ice cream mixture. Pour ice cream into the ice machine and finish. Or pour ice cream mixture into a metal bowl, cover and freeze for about 3 hours. Stir occasionally so that large ice crystals do not form.

For the sauce, using a sharp knife chop some chocolate chips for garnish. Melt remaining chocolate in a bowl over the hot water bath. Stir in butter and let cool slightly. Whip cream.

To serve, scoop ice cream into glasses and drizzle with chocolate sauce. Serve garnished with a dollop of whipped cream and chocolate chips.
