250 milliliters Whipped cream
6 egg yolks
50 grams sugar
5 centiliters Espresso
150 grams Milk chocolate (chopped)
50 grams Dark chocolate (chopped)
4 centiliters Amaretto
4 centiliters Cognac

Preparation steps

1.

Heat the milk and heavy cream in a saucepan.

In a double boiler or a heatproof bowl over a saucepan of simmering water, whisk the eggs with the sugar until foamy. Slowly whisk in the hot milk and cream. Stir with a wooden spoon until the mixture begins to thicken. Remove from heat. 

3.

Melt the milk chocolate in a double boiler and stir into the cream mixture. Add the espresso, amaretto and cognac and mix well. Allow the mixture to cool completely then stir in the chopped dark chocolate. 

4.

Place the bowl in the freezer and stir well about every 30 minutes. Alternatively, process in an ice cream maker according to the manufacturer's instructions.  

5.

To serve, scoop into balls using an ice cream scoop and garnish with coffee beans if desired.
