Preparation steps

1.

Beat butter, sugar, egg yolks and 1 teaspoon coffee powder until creamy, then stir in flour and cocoa powder and refrigerate for 1 hour.

Roll out the dough about 1 cm (approximately 1/2 inch) thick, cut out 90 small 3 cm (approximately 1 1/4-inch) oval shapes and place on parchment paper-lined baking sheets.

Bake in a preheated oven at 190°C (approximately 375°F) for about 10 minutes. Remove from oven and let cool on a wire rack.

Heat heavy cream with remaining coffee powder, add dark chocolate and stir to melt. Stir in cognac and allow to cool to lukewarm. Beat until creamy and place in a piping bag. Pipe icing on half of the cookies. Place a cookie on top of each iced cookie.

5.

Melt couverture over a hot water bath and place in a small piping bag. Pipe chocolate lines over cookies and decorate each with a chocolate coffee bean.
