Preparation steps

1.

Beat butter, powdered sugar, egg yolk and coffee powder until creamy, stir in flour and cocoa powder and mix well. Cover and chill for 1 hour in the refrigerator.

Roll out the dough between 2 layers of plastic wrap to about 1 cm (approximately 1/3 inch) thick, cut out 90 small oval cookies (about 3 cm) (approximately 1 1/4 inch) and place on baking sheets lined with parchment paper.

Bake in a preheated oven (180°C) (approximately 350°F) for about 12 minutes. Remove and let cool on a wire rack.

For the filling: Boil cream with the coffee powder, add chopped chocolate and stir until melted. Stir in brandy and allow to cool to room temperature, then beat until creamy with an electric mixer. Transfer to a piping bag with a large star tip, pipe the filling onto 45 cookies and top with the remaining cookies.

5.

For decorating: Melt the chocolate in a heat-proof bowl placed over a pot of simmering water. Transfer to a small freezer bag, cut a very small hole in one corner area and pipe fine chocolate lines onto the cookies as desired. Top with a chocolate coffee bean.
