100 grams Milk chocolate (30% cocoa)
100 grams soft butter
2 teaspoons Crème fraiche (min. 30% fat content)

3 eggs
200 grams brown sugar
½ teaspoon salt
180 grams Pastry flour
10 grams cocoa powder
10 grams Baking powder
1 tablespoon Rum
20 grams instant Coffee

Chop the two types of chocolate coarsely and melt together with butter over a hot water bath. Cool slightly and then stir in crème fraîche. Preheat the oven to 180 ° C (approximately 350 ° F). Line a baking sheet with parchment paper. Coarsely chop almonds. Mix eggs with sugar and salt in a bowl until light and creamy. Gradually add cooled chocolate-butter mixture while stirring. Mix flour with cocoa and baking powder. Heat rum and dissolve coffee in it. Stir into flour mixture and almonds until it resembles a dough. Put dough on baking sheet and smooth out. Bake brownies on the middle rack for 35-40 minutes, or until an inserted toothpick comes out clean. Cool and cut into pieces measuring about 5 x 6 cm (approximately 2 x 2 in).


For the garnish, rinse orange in hot water, wipe dry and finely grate zest. Cut fruit in half, squeeze out juice and pass through a sieve into a small saucepan. Add the sugar and simmer, forming a syrup. Mix in orange zest and cook until the syrup has a golden brown color. Spread syrup on top of brownies and cool before serving.
