Coffee Cake with Honey
Preheat the oven to 160°C (approximately 350°F). Butter a loaf pan with oil and then dust with flour.
Coarsely chop candied lemon, raisins and figs. Whisk butter in a bowl until fluffy. Add sugar and beat with eggs about 3 minutes until fluffy. Add honey, lemon, raisins and figs. In a separate bowl, mix flour with baking powder, cinnamon, cloves and coffee powder. Add flour mixture and milk to batter. Stir the dough until mixed and immediately pour into the greased loaf pan. Bake in preheated oven for 60-70 minutes. Test if cake is done with a toothpick.
Let cake cool for 5 minutes in the pan, then remove from pan and let cool on a wire rack.
To serve, dust with icing sugar and slice.
