1 Cutting board, 1 Small knife, 2 Bowls, 1 Wooden spoon, 1 Pot, 1 Whisk, 1 Springform pan (24 cm diameter), 1 Parchment paper, 1 Wire rack, 1 Tea strainer, 1 Measuring cups, 1 Tablespoon, 1 Teaspoon

Preparation steps

Rinse peaches and cut into slices. Place in a bowl and mix with cornstarch and sweetener to taste.

In a pot, heat 3 tablespoons of milk. Stir in coffee until fully dissolved. Stir in the remaining milk and allow to cool.

In a bowl, mix flour, sugar, baking powder and 1 pinch of salt.

Whisk together the canola oil, eggs and coffee-milk mixture. Mix in the flour briefly, then fold in the peach slices.

Line the bottom of a springform pan with parchment paper and spread the batter over the paper. Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) on the middle rack, 35-40 minutes.

Insert a small knife between the cake and pan and slide along the edge to loosen. Unmold and let cool on a wire rack.

Melt chocolate in a microwave oven or over a hot water bath and drizzle over the cake. Sprinkle powdered sugar over the cake if desired.
