Sieve the flour into a bowl and create a well in the middle. Place the yeast in the well and mix with a little milk, a little sugar and some of the flour. Cover and leave the pre-dough to rise in a warm place for around 20 min.
Heat the butter and the remaining milk and add to the pre-dough along with the eggs and the remaining sugar. Mix well to form a smooth dough that comes away easily from the sides of the bowl. Cover and leave to rise in a warm place for around 45 min until it has doubled in size.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line a baking tray with grease-proof paper.
Knead the mocha beans into the dough and then split the dough into 6 or 8 pieces. Break each piece in half and roll out into strings on a floured work surface. Twist the two strings together and shape into rings pressing the ends together firmly.
Place the rings onto the prepared baking tray, cover and leave to rise for another 20 min. Mix together the milk and the egg yolks and brush onto the rings. Bake for 30 min until golden brown. Remove from the oven and leave to cool.
