1 cup Soy milk (1.2% fat; ice cold)
2 tsps chopped Shelled pistachio

Coconut Soy Smoothie preparation step 1

Cut pineapple into quarters. Cut two narrow strips from 1 quarter and set aside. Cut peel and core from remaining pineapple and dice the flesh.

Coconut Soy Smoothie preparation step 2

Put diced pineapple, coconut milk and soy milk into a tall vessel and puree with an immersion blender until smooth. Fill 2 glasses with ice cubes and pour in smoothie mixture. Garnish with pineapple strips and pistachios. Serve immediately.
