Preparation steps

Preheat the oven to 200°C (approximately 400°F) and line a baking sheet with parchment paper.

Separate the eggs. Beat the whites with 1 pinch of salt and 5 tablespoons cold water until stiff with the whisk attachment of a hand mixer. Beat the egg yolks with 200 grams (approximately 1/2 cup of sugar and 1 teaspoon vanilla sugar until foamy. Mix together the flour and baking powder, sift over the egg mixture and gently fold in. Spread the batter onto the baking sheet. Bake for 10-12 minutes and check for doneness with a toothpick. Turn the cake out onto on a clean kitchen towel. Pull the baking paper off immediately and set aside to cool. Stir together the quark, creme fraiche, amaretto syrup, 50 grams (approximately 2 tablespoons) sugar and 1 teaspoon vanilla sugar until smooth in a large bowl. Whip the cream and sprinkle with stabilizer. Fold the cream into the mixture. Break the cake into fine pieces. Fold everything together with a spatula to make a "dough". Sprinkle the coconut on a tray. Divide the mixture into three equal portions. Form one portion with moistened hands into 8 uniform balls. Form the other portions of dough into 4 large balls. Roll the balls in the coconut, and flatten the larger balls on one side. Set each of the large balls on a saucer and put the smaller ball on top to make the head. For the hats, put the marshmallows on the cookies and stick together with chocolate icing. Use the marzipan carrots, oranges and chocolate chip to finish decorating the snowmen. Serve as a festive winter treat.
