Coconut Shrimp on Rice Noodles

- 400 grams fine Rice noodles
- 400 grams shrimp (ready to cook)
- 1 sprig Lemongrass (only the white and light green portions)
- 1 garlic clove
- 2 centimeters fresh ginger
- 150 grams shiitake mushrooms
- 2 Tbsps Coconut oil
- 1 tsp green Curry paste
- 250 milliliters Coconut cream
- 1 Tbsp light soy sauce
- 1 Tbsp Lime juice
- freshly chopped parsley (for garnish)
Preparation

Cook rice noodles according to package directions.

Rinse shrimp and pat dry. Rinse lemongrass, trim and cut into thin rings. Peel garlic and ginger and finely chop. Trim mushrooms and cut into strips.

Heat oil in a wok and saute ginger with garlic and lemongrass briefly. Add mushrooms and prawns and fry while stirring for about 2 minutes. Add curry paste, stir and then deglaze the wok with coconut milk and season with soy sauce and lime juice.

Arrange drained rice noodles in bowls, cover with coconut shrimp mixture and serve garnished with parsley.
