In a bowl, beat the egg whites with the lemon juice until stiff. Continue beating, while adding the sugar 1 spoonful at a time, until very stiff and glossy. Gently fold in the coconut.
Line a baking sheet with the wafers. Dollop teaspoon sized portions on top of each wafer.
Bake in a 150°C (approximately 300°F) oven for 25 minutes. Remove and allow to cool before serving.
