150 grams butter
150 grams sugar
½ teaspoon Lemon peel
2 eggs
150 grams Pastry flour
100 grams ground almonds
2 teaspoons Baking powder
125 milliliters Coconut milk

200 grams Mascarpone
50 grams sugar
red Food coloring
150 milliliters Whipped cream

Preparation steps

Line muffin baking tray with muffin paper cups.

For the dough: beat butter with sugar and lemon zest until fluffy. Gradually add eggs. Combine flour, almonds and baking powder, mix with coconut milk. Combine milk and butter mixture, mix well. Pour batter into prepared muffin cups and bake in preheated oven at 180°C (approximately 350°F) for about 25 minutes (inserted toothpick should come out clean).

Combine mascarpone with sugar, add red food coloring, if desired. Whip cream until stiff and fold into mascarpone.

Remove cupcakes from oven, cool slightly and remove from a tray. Cool completely on a wire rack. Top cupcakes with cream, sprinkle with sugar and serve.
