Coconut Coffee Mousse
Soak gelatin in plenty of cold water. Mix the coffee with up to 3 tablespoons of the coconut milk and coconut liqueur. Warm 3 tablespoons of coffee, add well-squeezed gelatin and stir to dissolve. Gradually stir the dissolved gelatin into the cold coffee mixture.
Chill until set. Whip cream until stiff and fold half into the coffee mixture. Fill a serving bowl with remaining coffee mixture, top with the rest of the cream and distribute it evenly. Sprinkle with coconut and chill for 2 hours before serving.
