Preparation steps

For the base, mix the flour with the sugar and 1 pinch of salt, mound up on the work surface and make a well in the center. Beat the egg, pour into the center and distribute the butter in small pieces around the flour. With your hands, mix all ingredients quickly and knead to make a smooth dough. Form into a ball, wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

Roll out the dough on a floured work surface to the size of the baking sheet. Line the baking sheet with parchment paper and place the dough on the sheet, forming an edge around the outside.

Melt the butter with the sugar and honey in a saucepan. Sprinkle in the coconut flakes, stir well and remove from the heat. Allow to cool slightly and gradually stir in the eggs with crème fraîche. Spread the mixture on the dough base and bake in the preheated oven for 35-40 minutes. If the cake is browning too quickly, cover with aluminum foil.

Chop the chocolate, melt over a hot (not boiling) water bath, remove from the heat, let cool and place in a freezer bag. Cut off one tiny corner.

Remove the finished cake from the oven, let cool, cut into pieces and draw little bears on each piece with the melted chocolate. Allow to dry, then serve.
