For the muffins
200 grams Pastry flour
50 grams Shredded coconut
1 organic Orange (zested)
50 grams finely diced candied orange
1 ½ teaspoons Baking powder
½ teaspoon baking soda
1 egg
80 grams sugar
60 milliliters vegetable oil
100 milliliters Orange juice
150 grams Yogurt (0.1% fat)
1 centiliter Rum
24 Mini paper baking cups
For decorating
150 grams cream cheese
70 grams powdered sugar
2 tablespoons lemon juice
100 grams Shredded coconut
24 Raffaello (almond coconut candies)
sprinkle (or sugar pearls)
Mini-Smarties

Preparation steps

1.

Line wells of muffin pan with mini paper baking cups.

For the muffins, mix flour, coconut, orange zest, candied orange peel, baking powder and baking soda.

Whisk egg slightly, stir in sugar, oil, orange juice, yogurt and rum and mix well. Add flour mixture to egg mixture and stir just until dry ingredients are moistened.

Pour batter into prepared muffin pan. Bake muffins in oven preheated to 180°C (approximately 350°F) for about 15 minutes. Let muffins cool completely.

5.

For decorating, beat cream cheese, powdered sugar and lemon juice until smooth, spread over muffins and top with coconut and sprinkles. Decorate each Raffaello candy with 2 Smarties for eyes and and an icing mouth. Place candy "heads" on muffins to serve.
