Cocktail Sauce (large Bowl, Center)
Mix egg yolks in a bowl with orange juice, stir with a whisk and season with salt and pepper.
Gradually add oil while stirring constantly. Then add ketchup and cognac and stir.
Rinse tomatoes, blanch, peel, remove seeds and mash pulp. Beat cream in a bowl until stiff. Gently fold in tomato puree and whipped cream to egg yolk mixture.
