21 ounces Goose breast (with fat layer)
2 tablespoons salt
1 teaspoon sugar
freshly ground Black pepper
7 ounces Goose fat
cup dry white wine
3 bay leaves
1 teaspoon grated Orange zest
To serve
roast pork (shredded)

Preparation steps

1.
Separate the goose breasts from the fat layer. Rub the meat with the salt, sugar and pepper, then wrap in foil and chill for 24 hours.

Cut the goose fat into very fine cubes and heat gently in a pan over a low heat until melted.
3.
Add the wine, bay leaves and orange zest.
4.
Remove the goose from the foil, cut lengthwise along the grain into very fine pieces and add to the pan. Cook over a very low heat for about 2 hours until the meat is very tender. Beat well until blended.
5.
Put into a dish, cover and chill. Serve to taste with shredded pork, crusty bread and baked apple garnished with a bay leaf.
