7 ozs Celery root
1 carrot
18 ozs Beets ((vacuum packed, pre cooked)
1 onion
2 Tbsps vegetable oil
34 ozs Vegetable broth
salt

ground Caraway
ground cilantro
1 Tbsp Wine vinegar
1 pinch sugar
4 Tbsps Sour cream
Dill (for garnish)

Preparation steps

1.

Rinse the cabbage, trim and slice into thin strips. Peel the celery root, carrot and beet peel and thinly slice. Peel the onion and chop. Sauté the onion in hot oil over low heat. Pour in the broth and add the rest of the vegetables. Simmer about 40 minutes.

Season to taste with salt, pepper, cumin, coriander, vinegar and sugar and transfer to bowls. Serve garnished with sour cream and dill.
