Preparation steps

1.

To prepare the schnitzels, rinse the veal shoulder and pat dry. Cut the veal shoulder in four equal slices and halve each slice, if desired. Season with salt and pepper on both sides.

Heat oil in a pan and fry the veal schnitzels in portions until golden brown on both sides for 1-2 minutes over medium heat. Drain the schnitzels and keep warm, if desired, in the oven at 80°C (approximately 175°F) until all the schnitzels are fried.
