1 Small pot, 1 Springform pan (24 cm diameter), 2 Bowls, 1 Teaspoon, 1 Fine grater, 1 Hand mixer, 1 Parchment paper, 1 Freezer bag, 1 Citrus juicer, 1 Oven rack, 1 Meat mallet (or rolling pin)

Preparation steps

Melt butter in a small pot. Place cookies in a freezer bag and finely crumble with a meat mallet (or rolling pin).

Mix crumbled cookies with butter in a bowl and press into bottom of a springform pan (24 cm diameter) (approximately 10 inches in diameter) lined with parchment paper. Bake on bottom rack of preheated oven at 150°C (fan 130°C, gas: mark 1-2) (approximately 300°F) until set, about12 minutes. Remove from oven and let cool.

Meanwhile, beat cream cheese and sugar in a bowl until creamy. Rinse lemon in hot water, wipe dry and finely grate 2 teaspoons of zest. Squeeze 2 teaspoons juice from lemon. Mix lemon zest and juice, sour cream and eggs into cheese mixture.

Spread filling over crust in pan and bake on bottom rack at same temperature for 1 hour. Turn off oven and let cheesecake stand for 15 minutes with oven door slightly ajar. Remove cheesecake from oven and allow to cool for about 3 hours before serving.
