1.333 cups milk
4 egg yolks
½ cup caster sugar
1.333 cups cream (38% fat)
2 tsps vanilla extract

Preparation steps

Heat the milk in a pan to almost boiling. Remove from the heat.

Whisk together the egg yolks and sugar in a heatproof bowl until combined, then gradually whisk in the hot milk, whisking constantly.

Place the bowl over a pan of simmering (not boiling) water and cook, stirring constantly until the mixture is thick enough to coat the back of a wooden spoon. Remove from the heat and leave to become cold, stirring occasionally.
4.
Whisk the cream until thick, then fold into the custard with the vanilla.
5.
Put into a freezerproof container and freeze for 6 hours, beating twice with a fork during this time to break up the ice crystals.
