2 small onions
4 Pickled cucumbers
4 Beef roulade (each about 180 grams)
salt
freshly ground peppers
2 teaspoons hot Mustard
4 slices Bacon
150 grams Celery root
1 carrot
½ stalk Leeks
2 tablespoons vegetable oil
150 milliliters Red wine
250 milliliters Beef broth
2 sprigs thyme

Preparation steps

Peel onions and cut into rings. Quarter pickles lengthwise. Season meat slices with salt and pepper and brush each on one side with mustard. Top with slices of bacon, pickles and onion rings and roll up. Secure with toothpicks.

Peel and rinse vegetables, chop. Heat oil in a roasting pan and brown roulades on all sides. Remove from the pan and saute vegetables in the same pan for a few minutes. Return meat to the pan and deglaze pan with red wine. Add broth  and simmer, covered, for about 1.5 hours on low heat. Add thyme. Remove roulades and thyme from the pan and strain sauce through a sieve. Simmer sauce down or add a little broth to reach desired consistency. Season to taste. Arrange roulades on plates and drizzle with sauce. Serve.
