unwaxed lemons (juice and zest)

Preparation steps

1.
For the base: heat the oven to 160°C (140° fan) 325°F gas 3. Butter a rectangular or square baking tin.

Beat the butter with the sugar in a mixing bowl until creamy. Add the flour and salt and mix to a smooth dough.

Press the dough into base of the baking tin. Bake for 20 minutes until cooked and golden. Allow to cool.
4.
For the filling: beat the eggs with the sugar until foamy. Mix in the flour, salt, lemon juice and zest. Pour the mixture over the crust. Bake for a further 25-30 minutes until the filling is set. Leave in the tin to cool completely.
5.
Slice into small squares. Sift over the icing sugar.
