Preparation steps

Beat the butter, sugar and egg together for about 10 minutes until frothy. Add the cinnamon, lemon zest and ground almonds and mix well. Add the flour and baking powder and knead into a dough. Wrap the dough in plastic and place in the refrigerator for about one hour.

Preheat the oven to 180°C (approximately 350°F).

Divide the dough into portions and roll out to 4mm (approximately 1/8 inch) thick on a floured surface. Create a waffle pattern with a grid, and bake in the preheated oven for about 15 minutes. Allow to cool slightly, then break into large pieces and let cool completely.
