Preparation steps

In a large bowl cream together butter and sugar until light and fluffy. Gradually sift in the flour, baking powder, salt and cardamom; stir until well blended.

Divide the dough into four equal portions. Cover each portion with plastic wrap and refrigerate for one hour.

Preheat oven to 350º F. Line baking sheets with parchment paper.

On a lightly floured work surface, roll dough out to 1/4-inch thickness. In a small bowl, mix sugar and cinnamon together. Cut dough into desired shapes with cookie cutters. Sprinkle tops with cinnamon sugar. Place cookies 1 1/2-inches apart on prepared baking sheets.

Bake for 10 to 12 minutes, or until light brown. Cool on baking sheets for 5 minutes before transferring to wire racks to cool completely. Serve.
