Cinnamon Spice Cookies
- 1 cup butter (at room temperature)
- 1 cup sugar
- 2 eggs
- 1 teaspoon pure vanilla extract
- 4 cups all-purpose flour
- 2 teaspoons Baking powder
- ¼ teaspoon salt
- 1 tablespoon ground Cardamom
Yield with vary depending on size of cookie cutters.
In a large bowl cream together butter and sugar until light and fluffy. Gradually sift in the flour, baking powder, salt and cardamom; stir until well blended.
On a lightly floured work surface, roll dough out to 1/4-inch thickness. In a small bowl, mix sugar and cinnamon together. Cut dough into desired shapes with cookie cutters. Sprinkle tops with cinnamon sugar. Place cookies 1 1/2-inches apart on prepared baking sheets.
