Cinnamon Plum Muffins
Rinse the plums, pat dry, halve, pit and chop. Preheat the oven to 180°C (approximately 350°F). Combine the flour, baking powder and cinnamon. Whisk together the egg, sugar, oil and buttermilk then stir into the dry ingredients until just combined. Fold 3/4 of the plums into the batter.
Line the muffin pan with paper liners. Fill the liners to around 2 cm (approximately 3/4 inch) below the rim, sprinkle with the remaining plums and bake for about 20-30 minutes until a toothpick inserted in the center comes out clean. Remove and let cool.
