1 teaspoon Baking powder
1 pinch salt
3 teaspoons cinnamon
6 ounces Coconut oil
1 teaspoon coconut sugar
1 teaspoon Vanilla
2 tablespoons honey
4 tablespoons Buttermilk

Preparation steps

Mix the whole wheat flour, baking powder, salt, and 2 tsp. cinnamon in a bowl. Melt 4 tablespoons coconut oil and add it to the flour mixture with coconut blossom sugar, vanilla, and honey. Knead everything with the hand mixer to a crumbly dough. Then stir in the buttermilk.

Form the dough into a ball with your hands, place it on a piece of baking paper, and press it flat a little. Now place a second piece of baking paper on top and roll out the dough very thinly between the papers with a rolling pin (max. 1/4").

Melt the remaining coconut oil and mix with 1 teaspoon cinnamon. Spread the oil mixture thinly on the dough with a brush.

Now carefully cut squares with a long knife. Lift the baking paper onto the baking tray and bake the cinnamon minis in a preheated oven at 340°F for 15 minutes until crisp.
