200 grams Pastry flour (plus extra for dusting)
50 grams ground Hazelnuts
60 grams cocoa powder
130 grams sugar
½ teaspoon Gingerbread spice
1 teaspoon Baking powder
1 pinch salt
80 grams butter (cold)
1 egg
1 packet Vanilla sugar
1 teaspoon Ground cinnamon
100 grams Strawberry Jam

Preparation steps


Rinse the lemons in hot water, pat dry, halve and finely grate 1 teaspoon lemon zest. Combine the flour, nuts, cocoa powder, 80 grams (approximately 1/3 cup) sugar, lemon zest, spices, baking powder and salt in a food processor. Mix in the butter and egg and process until smooth. Shape into a ball, cover with plastic wrap and chill for 1 hour in the refrigerator.


Halve the dough and roll out thinly on a floured work surface until 3 mm (approximately 1/8 inch) thick. Cut out heart shapes with a cookie cutter and arrange on baking sheets lined with parchment paper. Bake in a preheated oven at 180°C (convection oven 160°C; gas mark 2-3) (approximately 350°F) for 10-12 minutes.


Meanwhile, mix the remaining sugar, vanilla sugar and cinnamon together. Heat the jam and pass through a sieve.


While still hot, loosen the hearts from the baking sheets, spread the jam over 1/2 then sandwich together with the remaining halves. Toss in the sugar mixture and let cool completely on a wire rack.
