Preparation steps

1.

Boil 5 ounces of cream with the milk, cognac, cinnamon, and sugar. Take off the heat and let sit for about 10 minutes. Remove the cinnamon stick and add the chestnuts.

Puree until the mixture is a fine cream and let cool, stirring occasionally. Divide evenly into serving bowls. Whip the remaining cream with the vanilla until stiff peaks form and spoon on top of the chestnut cream. Dust with cocoa powder and serve immediately.
