Preparation steps

Chop the chocolate and melt in a metal bowl with the cream over a hot water bath while stirring. Allow the sauce to cool slightly, then stir in the orange peel.

For the dough, boil 500 ml (approximately 2 cups) covered with the salt. Add the flour all at once and stir with a wooden spoon. Heat about 3 minutes, stirring until the dough dissolves as lumps from the pot bottom. Pour the mixture into a bowl and let rest covered for about 10 minutes. Then fill a piping bag with a medium star tip (about 1 cm, approximately 1/2 inch).

Heat the oil in a large pot (or deep fryer) to about 170°C. (The oil is hot enough when small bubbles ascend on a wooden dipper.)

Squirt the dough in portions about 12 cm (approximately 5 inches) long into the oil, cutting off the dough with a small twist of the tip. Fry until golden brown for 4-5 minutes, turning once. Remove the churros from the fat with a skimmer and drain on paper towels.

Dust with sugar and serve warm with the best chocolate sauce for dunking yet.
