Ingredients

For servings

½small Watermelon diced
2yellow Bell pepper one-quarter sliced, the rest diced
½Cucumber peeled and diced
1Red onions finely diced
2 tablespoonsBasil chopped
1 ⅔ cupsvegetable stock (from a jar)
⅜ cupswhite wine
Chili powder to taste
Sour cream to serve
salt
freshly ground peppers

Directions

1 Mix the melon and vegetables together, and then add the vegetable stock. Add the white wine and season to taste with pepper and chilli powder.
2 Leave to stand in the refrigerator for at least 1 hour.
3 Serve garnished with strips of pepper and basil. Serve with sour cream if desired.
