caster sugar (heaped)

Preparation steps

1.
Heat the oven to its lowest setting. Line 2 large baking trays with non-stick baking paper.

Whisk the egg whites, vanilla and salt with an electric whisk until beginning to form peaks.
3.
Gradually whisk in the caster sugar until stiff, but not dry.
4.
Put the meringue into a piping bag and pipe Christmas tree shapes on the baking trays.
5.
Bake for about 2 hours, until the meringues sound crisp when tapped underneath. Turn the oven off and leave to cool in the oven for a further 1 hour.
6.
Carefully peel away the paper and leave to cool completely.
