Preparation steps

For the chocolates: Line a baking sheet with parchment paper.

Separate the egg and put yolk into the refrigerator. Grate marzipan finely and mix with sugar and egg white. Using an electric mixer (with a dough hook) mix into a smooth dough. Knead by hand until the mixture holds together. Then form into a roll of about 2.5 cm (approximately 1 inch) in diameter and cut into about 25 pieces. Form pieces into balls, press flat and place on the baking sheet. Allow to dry for about 30 minutes.

Preheat oven to 175°C (approximately 350°F). Bake marzipan for about 10-12 minutes until lightly brown. Remove and let cool completely on a wire rack.

For the dark dough, cut butter into small pieces and place in a bowl. Add powdered sugar, vanilla sugar, cocoa, cinnamon, cloves and ginger and blend everything with a hand mixer. Add rum and chilled egg yolk and mix into a soft dough. Place in the refrigerator for about 15 minutes.

Then distribute evenly on the marzipan discs and form small domes, so that the chocolate gets a beautiful shape. Put in the freezer for 30 minutes.

For the glaze: Chop chocolate coarsely and melt with butter in a bowl over a pot of hot (not boiling) water. Immerse chocolates one at a time (best with a chocolate dipping fork) and dry on parchment paper. Serve as desired.
