800 grams Chicken breasts
7 sheets white gelatin
1 shallot
2 tablespoons vegetable oil
salt
peppers (from the mill)
250 milliliters Whipped cream (at least 30% fat content)
200 milliliters Vegetable broth

Preparation steps

Rinse the chicken breast fillet, pat dry and cut into cubes. Soften the gelatin in cold water. Peel the shallot and sauté in a hot pan with oil for 1-2 minutes until translucent. Fry the diced chicken for 3-5 minutes. Season with salt and pepper. Remove 1/3 of the chicken and set aside.

Mix the remaining chicken dices with cream and pour the broth. Simmer over medium heat for 15-20 minutes. Remove from heat and purée in a blender. Mix the remaining diced chicken with the puréed chicken. Stir in and dissolve the gelatin and fill the chicken mixture into a terrine mold. Keep in refrigerator for at least 4 hours. Serve garnished with spices and herbs.
